When summer stone fruits are in season, this must be one of the easiest desserts ever. Mix it up with a combination of different fruits.

Ingredients Preparation

4 ripe peaches
250ml saffron syrup
Pinch of saffron
1 vanilla pod, split and scraped
1 bay leaf
150g orange blossom pashmak
(Persian fairy floss)
Ice cream or thickened yoghurt, to serve


1. Preheat oven to Hot air 160°C + 30% humidity.
2. Cut each peach in half and remove the stone. Place onto a stainless steel unperforated tray and pour over the saffron syrup. Add a pinch of saffron threads, the vanilla pod and bay leaf.
3. Roast in the oven on shelf position 2 for 15 to 20.
4. Remove from oven and gently coat the peaches in the hot syrup.
Serve with pashmak and ice cream or yoghurt.

Note
The cooking time with vary, depending on the ripeness of the peaches.
Saffron syrup is available from specialty food stores.
