Ingredients 2kg mussels, cleaned 1 onion, finely chopped 2 cloves garlic, finely sliced 1½ cups white wine ½ cup parsley, chopped, plus extra to garnish |
1. Place Gastronorm roaster in oven on a wire rack on shelf position 1 and preheat oven to Hot air 200°C + 100% humidity. 2. In a fry pan over medium high heat, Induction level 8, sauté onion and garlic for a few minutes. Remove from heat. 3. Place all ingredients in the preheated Gastronorm roaster. Return mussels to the oven and cook for 15 minutes, until mussels have opened. Toss the mussels in the cooking liquid and discard any unopened mussels. To finish 1. Serve the mussels with sauce and garnish with extra chopped parsley. |
