These are a world away from tinned beans. Once you’ve made these, you’ll never go back. They are so easy in the combi-steam oven. Perfect for breakfast, but also delicious for a warming supper.

4 slices thick cut smoky bacon, about 400g, sliced thinly 1 brown onion, diced 2 tbsp oil 400g tin diced tomatoes 1 tbsp brown sugar 4 tbsp maple syrup 2 tbsp Worcestershire sauce 4 x 400g cans white beans, drained and rinsed 1 bay leaf Sea salt and black pepper, to season 4 tbsp maple sugar |
1. Preheat oven to Hot air 160°C + 30% humidity. 2. In the Gastronorm roaster or large cast iron pot, heat oil and cook bacon and onion for 5 to 10 minutes. Add the tomatoes, sugar, maple syrup and Worcestershire sauce. Stir well. 3. Add the beans and bay leaf. Add 1 cup of water and season with salt and pepper. Place in oven on a wire rack on shelf position 1 and bake for 50 minutes. 4. Set oven to Full surface grill + air recirculation 230°C. Sprinkle maple sugar over the beans. Grill for 5 to 10 minutes to caramelise the sugar. To finish 1. Serve with thick toasted baguette. Note Maple sugar is available from selected specialty food stores. |
